Shepherds Pie

I reached the leftover fatigue state of Thanksgiving early this year, but the good thing about leftovers is they can usually be turned into something else. So, Shepherds Pie. What else lets you use up turkey, vegetables, gravy, mashed potatoes all in one piece? And is this not the best (the only?) way to make shepherds pie? When you already have everything you need on hand?
It also reheats better in the oven, somehow this year I can't manage to get a serving of mashed potatoes to reheat properly in the microwave. Plus, shepherds pie allows you to bake a cheese crust on top of the mashed potatoes.
If you're out of mashed potatoes, feel free to substitute any other leftover purée you have. Maybe not apple? But butternut squash would probably do. Or, make biscuits and suddenly you have pot pie.



So, cut up your turkey, spread it along the bottom of your casserole dish. Or if you are feeling fancy, use multiple smaller dishes for individual servings. Pour any vegetables on top. (Beans, corn, etc).  If you ran out of those, frozen ones will do nicely here too. Pour your gravy over this. Now spread your mashed potatoes on top, and sprinkle with grated cheese, if you like.

Bake at 350 til properly hot or the cheese is golden brown. Should take about 30 minutes or so. Admire your brilliance. Add whatever condiments you enjoy.
One of these will make it better.
